At the J. Dass Distillery, we set the bar high as we designed what we call the new age modern distillery. Proven methods and best practices are infused into all aspects of the distilling process. Our philosophy combines the tried-and-true techniques of the past with modern equipment and sustainable distilling practices.

KEEPING IT LOCAL

World-class products start with only the best local grains and Lake Ontario water which is carbon filtered and mineralized to emulate the most famous whiskey waters of the World. Canadian rye, barley, malt, and other proprietary grains are used in the making of our spirits. Nothing is imported to help reduce our carbon footprint and to ensure we have the highest quality ingredients throughout our supply chain.

PATENTED EQUIPMENT

Making the best spirits in the world also means using the best equipment the world has to offer. Our specially architected hybrid pot still was made to our exacting standards. Using this patented still-column design, the J. Dass signature whiskey is produced in a single fast distillation allowing for lubricious flavours to develop without breaking down the distinct compounds which add character to each batch.

ONLY THE HEARTS

Once the fermentation and distillation process are complete, only the best part of the whisky is retained. This is called the “heart” of the liquid which retains variety of character and dimension for each spirit we produce.

BARREL AGING

After the distillation process is complete, our various whisky products are aged in new charred white-oak barrels. Strategic placement of the barrels in our rick house allow the liquid to be subjected to a full spectrum of summer heat and winter cold. This expansion and contraction of the barrels during each season creates our signature flavour characteristics. Deccani premium Whisky is aged for at least 12 years.

ENVIRONMENTAL SUSTAINABILITY

The J. Dass distillery is committed to energy and water-use efficiency which greatly reduces any environmental impact. As an example, all the water coming out of the still condensers is collected and converted to mash water for the next grain mashing cycle. The water goes into the condensers cold and comes out very hot. This heat gives the mash a head start so that both heat and water are saved in each subsequent batch. Another example of our sustainable methods involves the spent grain left in the kettle which are picked up by local farmers who feed this high quality material to their livestock.

THE BENEFITS OF EXPERIENCE

Our Master Distiller, has over 30 years of experience as a distiller and has literally written the book on distilling. In fact, he has 3 widely distributed books to his name including Making Pure Corn Whiskey, The Distiller’s Guide to Rum, and The Distiller’s Guide to Whiskey. Ian has done extensive R&D into the making of whiskey, and other aromatic spirits and is focused on developing modern, efficient operating procedures that retain the traditional methods and secrets of the past.
